1 cup sugar
1 1/2 tsp. cinnanon
1/2 tsp. ground cloves
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. salt
2 eggs
1 1/2 cups cooked pumpkin
1 2/3 cups (1 tall can) evaporated milk
1 9" unbaked pie shell

Directions:
Whisk sugar, spices and salt together. Beat eggs with milk and combine with the sugar and spice mixture. Pour into unbaked pie shell. Bake in preheated 425 degree oven for 15 minutes then reduce heat to 350 degrees and continue baking about 40 minutes or until a knife inserted in pie comes out clean. Cool

I sometimes put a walnut crunch topping on top . Recipe follows:
1 cup chopped walnuts, 2/3 cup light brown sugar, 3 Tbs. melted butter. Mix and sprinkle over top of cooked pie and broil about 2 minutes. This is so good.
