(8) tart apples – best brands are Rome or Fiji
½ cup sugar
3 tbsp. all-purpose flour
1 tsp. ground cinnamon
¼ tsp. ground ginger
¼ tsp. ground nutmeg
1 tbsp. lemon juice
pastry for double-crust 9 inch pie
1 tbsp. butter

Directions:
Directions:
In a small bowl combine sugar, flour and spices, set aside. Peel apples and slice into thin wedges.
In a large bowl toss apples with lemon juice, add the sugar mix and coat apples thoroughly.
Line a 9 inch pie plate with bottom crust and trim pastry. Fill with the apple mixture, dot with butter. Roll out remaining pastry, place over filling, trim. seal and flute. Cut slits in top of the pie.
Cover edges loosely with foil, place pie plate on foil sheet and bake at 375º for 25 minutes. Remove foil and bake 20-25 minutes until crust is golden brown.
