•2 pounds boneless skinless chicken breasts pounded to 1/4″ thickness
•4 slices bacon, uncooked
•1/4 cup spinach, chopped
•2 teaspoons garlic, minced

Directions:
Directions:
Cook bacon on stovetop for 2-3 minutes, where it’s partially cooked through but still able to be rolled up. Arrange chicken breasts on a clean work surface. Using a mallet, pound chicken to 1/4 inch thickness. Place a slice of bacon on each each breast. Divide spinach and garlic evenly over the top of bacon and chicken. Begin to roll chicken tightly, ensuring all stuffing kept inside. Wrap rolled chicken in plastic wrap, then cut into 2 inch slices. Push skewers through slices to create pinwheels. Grill pinwheels over medium heat, 5 minutes on each side until desired doneness.

Freezing Directions:
Prepare chicken as indicated above, but do not slice after rolling in plastic wrap. Divide plastic wrapped chicken between gallon freezer bags. Label and freeze. TO SERVE: Thaw. Cut wrapped chicken into 2 inch slices, then push skewers through slices to create pinwheels. Grill pinwheels over medium heat, 5 minutes on each side until desired doneness.
