1/2 small head cauliflower, cut into small flowerettes
2 carrots, peeled and cut into 2" strips
2 stalks celery, cut into 1" pieces
1 green pepper, cut into 2" narrow strips
1 jar pimento in strips, drained
1 jar (3 oz.) olives, pitted and drained
3/4 cup wine vinegar
1/2 cup extra virgin olive oil
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
2 Tbs. sugar

In a very large skillet or 3" deep saute pan (wide) combine all ingredients with 1/4 cup water. Bring to a boil, stirring occasionally. Reduce heat, simmer covered 5 minutes. Cool and refrigerate at least 24 hours. Drain well.

This can be served in a wide salad bowl and the colors are beautiful. The recipe came from a McCall's magazine special article on Italian Cooking. Perfect to serve as a side dish on a summer evening or at lunch. Fresh mushrooms could be included.
