2 cups Split Peas, dried (green, yellow or half of each)
4 cups Chicken Broth (= 2 cans)
4 cups Water
2 cups Ham or Smoked Pork Chops, trimmed and chopped
½ cup Onion, finely chopped
2 cups Russet Potatoes, chopped
2 cups Baby Carrots
1 t Salt
½ t Thyme, ground
½ t Rosemary, crushed

Directions:
Directions:
Rinse dried peas in a colander then transfer to water and chicken broth in a large pot. Add the minced onion and bring to a boil on high; reduce to low and simmer for about 20-25 minutes. Add the potatoes, carrots, ham and seasonings; continue to cook on low-medium until the vegetables and peas are tender (about 20-30 more minutes). As the peas cook, they will fall apart and gradually thicken the soup. If it becomes too thick, add more water or chicken broth. Serve hot with biscuits or cornbread.

Carrots can be left out and the potatoes increased. You can also make a curry soup by replacing the thyme and rosemary with 1 T Curry powder and ½ t Cumin. To make this vegetarian, omit the ham and use vegetable broth.
