1 c. plus 1 tablespoon FLOUR

1 3/4 c. SUGAR

1 tsp. BAKING POWDER

1 c. MILK

2 c. PITTED SOUR CHERRIES, also called PIE CHERRY or TART CHERRIES.

Preheat oven to 350 F. Put butter in a 9-13-inch baking dish, and set in oven to melt while oven is preheating. Remove as soon as melted, about 5 minutes.

Stir together 1 cup flour, 1 cup sugar, and baking powder. Mix in milk until well blended, then pour batter over butter in pan. Do not stir.

Put cherries in a bowl and toss with remaining 3/4 cup sugar and remaining tablespoon flour. Do not stir.

Bake for 50 to 60 minutes, or until golden brown, a toothpick inserted into cobber should come out clean.

For more cherry flavor, add an additional 1 to 2 cups pitted cherries.

Maybe cut back a little on sugar.

To get 2 cups pitted cherries, you'll need about 12 ounce whole unpitted cherries; 1 1/2 (14.5-ounce) jar cherries in water, drained; or 1 (24 ounce) jar cherries in light syrup, drained and rinsed.
