1 five pound bag of red potatoes
1 large onion chopped med. to small
5 stalks celery chopped med. to small
4 hard boiled eggs peeled
4 to 5 slices of bacon
White vinegar
Salt and pepper to taste

Directions:
Directions:
Boil potatoes “in their jackets”, i.e. with skins on. When just cool enough to handle, peel potatoes and cut into pieces and place in a large bowl. Add chopped onions and celery. Chop eggs, and add to the potato mixture. Meanwhile, fry bacon until crispy. Break up pieces and add to the bowl. Save bacon grease from frying the bacon, and to it add ½ to ¾ cup of vinegar and bring to a boil. Scrape bottom of pan for any bacon bits, and pour entire grease/vinegar mixture onto the potatoes. Add salt and pepper to taste and mix everything together. Adjust flavor to the level of vinegar tartness you enjoy. Serve warm, or chill and serve cold. Salad will taste more tart after sitting for a while.

My mother was Bohemian and preferred to serve the potato salad cold, but a friend’s German mom would always serve it warm. Additionally, her salad was “juicer”. It had more of a sauce on it. I don’t know if she added water or how she made it that way. My mom’s and mine was always dry. I like it the way that I had it growing up, but it might be fun to experiment with it the other way as well.
