1 c. butter
1 c. sugar
1 egg yolk, save white
2 c. flour
2 1/2 tsp. cinnamon
walnuts, finely chopped

Directions:
Directions:
1. Sift dry ingredients together. Beat butter and sugar until light and fluffy. Add egg yolk; blend well. Stir in dry ingredients.

2. Roll into balls, and place on ungreased cookie sheet 2" apart. Flatten with spatula. Brush tops of cookies with lightly beaten egg white. Sprinkle walnuts on top.

3. Bake in preheated 350º oven for 15 to 20 mins.
