3 eggs
1 1/2 cups milk
1 cup flour
1/3 cup corn meal or masa flour
2 T. melted butter

Beef mixture:
1 lb. ground beef
1/2 tsp. chili powder
1/2 tsp. cumin
3/4 tsp. garlic salt
minced onion
1 clove minced garlic

Directions:

Melt butter in pan; set aside to cool a bit.

Combine eggs and milk. Add dry ingredients and blend well. Add reserved butter.

Prepare as "pancakes" on hot, well-oiled skillet, non-stick pan, or griddle. Batter will be thin. Cook until just firm and shell can be flipped. Shell should be light to medium brown. Shells will be done when edges rise from the pan.


To cook beef mixture: In a skillet, cook ground beef, chopped onion and garlic until meat is browned and onion is tender. Drain off fat. Season meat mixture with the spices.

Meat can be prepared ahead of time and reheated when the shells are close to being completed.

Serve with lettuce, tomatoes, shredded cheese, and any other favorite taco toppings!
