2c. flour
11/2c. sugar
2 tsp. soda
1tsp. cinnamon
1tsp. nutmeg
1/2tsp. salt
3 eggs
1/2c. oil
2 tsp. vanilla
2c. shredded carrots
1c. (81/2oz. can) pineapple
1c. nuts
1c. coconut (optional)

Mix dry ingredients (flour, sugar, soda, cinnamon, nutmeg, salt)
Beat eggs, oil and vanilla together
Add wet mixture to dry mix, and mix
Mix in rest of ingredients

Bake in 9x13 pan at 350 degrees for 45 minutes
