3 T. butter
3 C. sugar
1 tsp vinegar
3 T. white syrup
pinch of salt
3/4 C. half & half

Directions:
Directions:
Melt 3 T. butter in pan, brown slightly.
Add 3 C. sugar, 1 tsp. vinegar, 3 T. white syrup, pinch of salt, and 3/4 C. Half & Half.
Stir well & heat to boil.
Add 3 squares of chocolate
Boil slowly until thermometer reaches 236-238º
Cool to 120º
Beat with a wooden spoon until fudge loses its gloss.
Roll fudge into 2 logs
If you like, the fudge can then be rolled in chopped nuts.
