1/2 c. butter (shortening)
1 c. sugar
2 extra large eggs
2 c. mincemeat
1/2 c. apple-butter
8 oz. candied fruit (1 cup)
1 c. chopped walnuts
1 tsp vanilla
2 3/4 c. flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Directions:
Directions:
Cream the butter, sugar and eggs. Stir in mincemeat, apple-butter, fruit, nuts and vanilla. Sift together flour, baking powder, baking soda and salt.
Stir into mixture. Pour into buttered floured tube pan and bake at 350º F for 1 1/2 hrs. Make a glaze (1 tsp light corn syrup, 2 tsp brown sugar, 2 tsp water, 2 tsp lemon juice) cook to boiling. (I microwave). Decorate cake with candied pineapple and cherries and glaze.
