4 tilapia fillets
1/4 tsp salt
1 tbsp lemon juice
2 tbsp olive oil
1 small read onion, chopped
1 10oz can dice tomatoes and green chilies, undrained
3/4 cup chopped roasted sweet red peppers
1/2 cup chicken broth
1/4 cup tomato paste
1 tsp garlic powder
1 tsp dried oregano
cooked pasta or rice (optional)

Directions:
Directions:
Sprinkle salt on fillets, drizzle with lemon juice. Heat oil in skillet, cook onion then add next 6 ingredients; cook for 2-3 minutes longer.
Place fillets over tomato mixture, cook covered for 6-8 minutes over med-high heat, or until fish flakes easily with a fork.
If desired, serve with pasta or rice.
