1 pkg. lemon jello disolved in 1 1/4 cup water
1 can (8 oz.) tomato sauce
1 1/2 Tbs. cider vinegar
1/2 tsp. salt
horseradish to taste
1 Tbs. finely chopped onion
1 small clove garlic chopped very fine or pressed (optional)

Directions:

Mix all the ingredients together. Place in oiled Pyrex loaf dish and chill until solid. Cut into squares and serve over lettuce. A blob of mayo can be put on top but I always put cottage cheese on top.
