2 Tbs. salad oil
1 small sweet onion, chopped
1 Tbs. flour
2 Tbs.sugar
1 tsp. salt
1/3 cup water
1/3 cup cider vinegar

Directions:
Directions:
Place oil and onion in a small saucepan. In a cup, put flour, sugar and salt. Add to this, vinegar and water. Mix very well with fork or small whisk. Pour it into the pan, mix and cook, stirring, until thickened and pour over cooked potatoes. Serve warm or room temperature.

Rose was our neighbor in our first apartment in Woburn, MA in 1946. She was of German decent and her potato salad tasted like what was available at the Deli's in NJ when I was growing up. A taste of home.
