Meat marinade:
4 tbsp light soy sauce/aminos
1 tbsp rice vinegar
1 tbsp grated ginger OR 1 tsp ground ginger
2 tsp minced garlic
1 tsp toasted sesame oil
1/4 tsp crushed red pepper

Sauce:
2 tsp cornstarch
3/4 cup chicken broth
(Plus reserved marinade)

4 tsp oil, divided
1 lb chicken breast or pork, cut into chucks or strips
6 cups fresh vegetables OR 1 16oz bag frozen stir-fry vegetables
2 cups hot cooked quinoa or brown rice
1 tbsp sesame seeds, toasted

Mix marinade and marinate meat pieces in refrigerator for 30min. While marinating, prepare vegetables. SAVE marinade when done.

Heat 2 tsp oil and cook meat, toss and stir rapidly. Remove chicken and keep warm. Add more oil and cook vegetables. Add cooked chicken.

Prepare sauce (whisk cornstarch into the broth) and combine with reserved marinade. Add to meat and veg, cooking just long enough for the sauce to lightly coat the ingredients and thicken into a glaze.

Serve over quinoa topped with sesame seeds.
