Dressing

2 cups Olive Oil
1/4 cup balsamic vinegar
1/2 cup lemon juice
3 TBSP sumac
2 TBSP mint (can use fresh or dry mint)
Mix all ingredients together and store in a container

Fattoush Salad

4 cups of romaine lettuce
1-2 tomatoes, diced
1 cucumber, diced
1/2 cup Kalamata olives, chopped
1 small red onion, sliced
1 cup pita chips, crushed
1/2 cup parsley, chopped
Fattoush dressing

Directions:

Mix all ingredients in a bowl, toss well and serve.

Personal Notes:
You can use as much dressing as desired for the salad, it also keeps well for additional use. I typically use about half of the dressing for 1 salad.
