8-12 oz Tinkyada Rice Noodles
3 T Garlic Flavored Olive Oil
1 medium Onion
1/2 Red Bell Pepper
4 C Raw Spinach
4 Garlic cloves minced
1/2 teas dried Oregano crushed
1 T dried Basil crushed

1/4 C Butter melted
1/4 teas salt
1/2 teas Garlic Powder

Opt:1/4-1/2 lb ground beef or sausage

Directions:
Directions:
Cook noodles in boiling water along with 1 teas. salt and dash oil. Drain and set aside. To make ratatouille sauce cut peeled Onion and sweet Red Pepper in large chunks. In cast iron pan cook onions 5 minutes then add Red Pepper chunks, minced Garlic, Oregano and Basil. Stir fry about 3 minutes then add 1 jar spaghetti sauce. When hot add raw Spinach. Heat 3 minutes on high, turn off and cover.

Mix salt and garlic powder to melted butter. Pour over noodles and heat on stove just till warm. dish up on plates and top with hot ratatouille sauce.

I like to use a combination of Tinkyada Spiral and Tinkyada Penne noodles and ground sweet Italian sausage.
