This is one of those recipes you learn by trial and error. For a small batch of noodles, use 4eggs about 1 tsp. salt and flour to make a stiff dough.
Mom would beat the eggs and salt and gradually add flour until she had a stiff dough. She would flour the counter and roll the dough out thin. She would sprinkle flour on top flip them over and sprinkle the bottom. She would then cover them with a clean dish towel and let them dry. to make larger batches you use more eggs, salt and flour accordingly. When I have everyone over for noodles I usually use 4-6 eggs. I also roll out two sheets of dough.

I normally use whole eggs to make my noodles, because that is the way my mom made them. However, I recently discovered that if you use the yolks only, it takes less flour to make them and the drying time is substantially reduced. I think a lot of people only use the yolks, but again it is preference and tradition that usually determines the method. I usually make beef and noodles. I'll discuss that later.
