1 T extra virgin olive oil
1 lb lean ground beef or turkey
1 jar (24 oz) of marinara sauce
4-5 uncooked lasagna noodles broken into pieces
1 1/2 c. shredded mozzarella

Directions:
Directions:
Heat oil over medium heat in large, deep skillet. Add the beef or turkey, stirring to break it up, and cook for 5 minutes or until meat is no longer red.
Stir in half of the marinara sauce, add broken noodles on top, then cover with remaining marinara sauce.
Fill empty sauce jar two-thirds full of water (about 2 cups) and add to skillet. Stir to combine. Bring to a boil and reduce to a simmer, cover, and cook for 25 minutes, stirring occasionally.
Add cheese on top, do not stir again; cover for about 5 minutes until cheese is melted.

Not as great as the real deal, but fast and easy, and very tasty for the prep time and work required. Puree veggies to add to the sauce to sneak in greens for the little ones.
