Directions:
Heat oven to 350º. Mist and flour sheet pan 13x9x2 or 3 (8 inch) round cake pans. Clean berries and pat them dry. Select 4 to 6 of the prettiest berries for garnish. Set aside 4 for frosting. Remove stems and mash berries with fork or food processor until you have a smooth puree. You need 1 cup of berries.

Place cake mix and gelatin in a large bowl. Add strawberry puree, oil, eggs and vanilla. Beat with electric mixer on low speed until ingredients are incorporated. Scrape bowl and beat 1-1/2 minutes more until batter is smooth. Pour batter in prepared pan(s). Bake 18-25 minutes or until cake springs back when lightly pressed with a finger. Cool.

Frosting:
Mash 4 berries. Beat berries, cream cheese, and butter until smooth and blended. Add sugar and beat until smooth.

Frost cake. Take remaining strawberries and cut into fans to garnish top of cake.

Variation: Mash 1/2 cup watermelon for cake and 1/2 cup for frosting. Substitute watermelon for Jello. Delicious!
