Ingredients: Cake: Vegetable oil spray and flour for dusting pan(s) 2 cups fresh strawberries (fresh only!) 1 (15 oz) package yellow cake mix (may use gluten free if needed) 1/2 package strawberry Jello 1/2 cup canola oil 3 large eggs 2 teaspoons vanilla 1 teaspoon strawberry extract (if available) Frosting: 4 large strawberries 8 ounces cream cheese at room temp 4 Tablespoons butter 4 cups powdered sugar, sifted

Directions:Heat oven to 350º. Mist and flour sheet pan 13x9x2 or 3 (8 inch) round cake pans. Clean berries and pat them dry. Select 4 to 6 of the prettiest berries for garnish. Set aside 4 for frosting. Remove stems and mash berries with fork or food processor until you have a smooth puree. You need 1 cup of berries.
Place cake mix and gelatin in a large bowl. Add strawberry puree, oil, eggs and vanilla. Beat with electric mixer on low speed until ingredients are incorporated. Scrape bowl and beat 1-1/2 minutes more until batter is smooth. Pour batter in prepared pan(s). Bake 18-25 minutes or until cake springs back when lightly pressed with a finger. Cool.
Frosting: Mash 4 berries. Beat berries, cream cheese, and butter until smooth and blended. Add sugar and beat until smooth.
Frost cake. Take remaining strawberries and cut into fans to garnish top of cake. |

Notes: Variation: Mash 1/2 cup watermelon for cake and 1/2 cup for frosting. Substitute watermelon for Jello. Delicious!
