1 c. butter
1-1/2 c. onions, finely chopped
1-1/2 lbs. fresh mushrooms, sliced
3-1/2 lbs. top round, cut in 1/4 x 1/4 x 2 strips
6 T. flour
3 c. bouillon
1-1/2 tsp. salt
6 T. tomato paste
2 tsp. Worcestershire sauce
3/4 c. sour cream
1-1/2 c. heavy cream
8 c. fluffy rice, cooked

Directions:
Melt 1/3 c. of the butter in a large saucepan; add onions and saute until golden; then remove and set aside. Melt 1/3 c. more of the butter ; add mushrooms and saute until lightly browned; remove and set aside. Melt remaining butter in the pan; roll beef in flour and saute in the butter until browned. Add bouillon, salt and onions. Cover and simmer until beef is tender (about 1-1/2 hours).

Add tomato paste, Worchestershire sauce, sour cream, heavy cream and the mushrooms. Heat thoroughly. Cook rice as per package.

Serve hot rice and Stroganoff in separate large casseroles or you can use chafing dishes for a buffet.

Aunt Margaret used to prepare this for some of her big parties.....and for very special events, she would use filet rather than the top round.
