1/2 cup shortening
1 1/2 cup sugar
2 eggs, room temperature
2 oz red food coloring
2 Tbsp cocoa powder
1 tsp salt
1 tsp vanilla extract
2 1/4 cups flour
1 cup buttermilk
1 Tbsp vinegar
1 tsp soda

For icing:
1 cup butter, softened
1 tsp vanilla extract
1 cup sugar
1 cup milk

Preheat oven to 350º.

Prepare 2 - 9 inch round cake pans.

Beat shortening and sugar together until light and fluffy. Add eggs and beat well.

Make a paste of cocoa and red food coloring add to creamed mixture. Mix salt, vanilla and buttermilk together. Add flour to the batter, alternating with the milk mixture until just incorporated. Mix vinegar and soda and gently fold into cake batter. Don't beat or stir batter after this point.

Pour batter into prepared pans. Bake for 30 minutes or until toothpick comes out clean, about 30 minutes. Cool cakes completely on a wire rack.

For icing: Cook 5 Tbsp flour and milk over low heat until thick, stirring constantly. Let cool completely. While mixture is cooling, beat 1 cup sugar, butter and 1 tsp vanilla until light and fluffy. Add cooled flour mixture and beat until frosting is a good spreading consistency. Frost cake layers when completely cool.
