2 1/2 - 3 cups all-purpose flour
1 package active dry yeast
1 tsp. salt
1 cup warm water (115-120 degrees)
2 tbsp. cooking oil
tomato sauce
1 pound bulk Italian sausage or ground pork, cooked and drained
Sliced or chopped onions, peppers, mushrooms, olives and/or canned green chilli peppers (or other toppings)
2-3 cups mozzarella, Monterey Jack or Swiss cheese.

CRUST:
1. In a large mixer bowl combine 1 1/4 cup of flour, yeast and salt.
2. Stir in warm water and oil.
3. Beat at low speed with electric mixer for 1/2 minute, scraping bowl constantly.
4. Beat 3 minutes at high speed.
5. Stir in as much of the remaining flour as you can mix in with a spoon.
6. Turn dough out onto a lightly floured surface.
7. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6-8 minutes)

FOR THIN CRUST PIZZA:
1. Cover dough and let rest for 10 minutes.
2. For 12" pizzas, divide dough in half.
3. On a lightly floured surface roll each half into a 13-inch circle. For a 10 inch pizza, divide dough into thirds.
4. Transfer dough circle to greased 12-inch pan (or 10-inch) or baking sheets. Build up edged slightly to hold toppings.
5. Bake in 425º oven about 12 minutes or until lightly browned.
6. Spread cooled tomato sauce over hot crust. Sprinkle on toppings and cheese.
7. Return to the oven and bake at 425º for 10 to 15 minutes or until bubbly.

Makes 2 12" or 3 10" pizzas.
