6 eggs
1/2 tsp. salt
1/4 tsp. pepper
Dash tobasco sauce
4 small zucchini, sliced
1 large onion, sliced
1 clove garlic, crushed
2 cups spinach or Swiss chard, chopped
1 tbsp. parsley
1/2 tsp. oregano
1/2 tsp. basil
6 tbsp. butter or margarine
1/2 cup grated Parmesan, Romano, Swiss or jarlsberg cheese

Directions:

1. Beat eggs with salt, pepper, tobasco.

2. Prepare vegetables and herbs.

3. In medium size ovenproof skillet, melt 3 tbsp. butter. Heat until a drop of water bounces in pan.

4. Add zucchini, onion and garlic. Saute until limp.

5. Combine vegetables and herbs. Mix with eggs in bowl.

6. Add egg-vegetable mixture all at once, turn down heat. Cook without stirring until set and top is moist.

7. Sprinkle on cheese and place under broiler about 4 inches from heat. Broil until golden brown.

Enjoy!
