Several large red peppers (or yellow and orange)
5 pounds ground pork
1 or 2 large onions, finely chopped
2 tablespoons salt
1 tablespoon black pepper
2 tablespoons paprika
1 pound rice (2 cups)
1 egg
1½ cups water
1 large can tomato juice

Directions:
Directions:
Combine pork with chopped onion, pepper, paprika, rice, salt, egg and 1½ cups water. Mix well and stuff into each pepper (washed, tops and insides removed). May make large balls of mixture if not enough peppers.

Make roux – heat 2 to 3 tablespoons oil and add 2 tablespoons flour. Stir until light brown. Add a small amount of cold water or tomato juice and stir until no lumps. Then add tomato juice, salt and 2 or 3 tablespoons sugar. Add additional water (measuring about a half of the tomato juice can).

Add filled peppers to the tomato juice mixture. Cook slowly for 2 hours.
