1 medium onion, chopped
4 c pealed and diced cooked potatoes
1 large can cream of chicken soup
1 pound bacon, cooked and drained
salt and pepper to taste
1 can milk

Directions:
Directions:
Cook bacon until crispy and set aside. In bacon grease cook chopped onion until tender.

Cook potatoes in chicken broth or water until al-dente; drain potatoes but save some cooking liquid.

In a large pot add cream of chicken soup. Add and mix well 1 can of milk and cooked onions plus bacon grease. Stir. Add potatoes and stir gently.

May add all of the crumbled bacon now or use for a garnish.

Simmer until flavors blend. May add cheddar cheese on top along with bacon to serve.
