1 1/2 c heavy cream
1 1/2 c whole milk
6 egg yolks
1 tbsp vanilla bean paste or 1 1/2 tsp vanilla extract
1/2 c sugar
Pinch of salt

Directions:
In a saucepan over medium heat, combine cream and milk, and cook until steam rises. In a mixing bowl, whisk together yolks, vanilla paste or extract, sugar and salt until smooth. Gradually pour hot cream, a little at a time, into yolks, stirring constantly. return mixture to sauce pan, and place over medium-low heat. Cook, stirring slowly and continuously with a wooden spoon until custard thickens and leaves a path on back of spoon when a finger is drawn across it, about 6-7 minutes; do not allow mixture to boil.

Pour mixture through a fine mesh sieve set over a clean bowl; chill 1 hour. Transfer mixture to an ice cream maker and freeze according to manufacturer's instructions.

Serve immediately, or transfer to a chilled container; cover and freeze, 3-4 hours
