Ingredients: 20 chocolate wafer cookies, crushed into fine crumbs, about 1 cup. 4 (8 oz) packages cream cheese at room temperature 1/2 vanilla yogurt 1 1/4 c sugar 1/4 c flour 1/2 tsp salt 2 eggs 2 egg whites 1 tsp vanilla extract 1/4 c unsweetened cocoa powder Raspberries and mint for garnish, optional

Directions:Preheat oven to 325º. Position rack in center of oven. Coat 9" springform pan with nonstick cooking spray. Press chocolate wafer crumbs evenly in bottom of pan. Wrap a large piece of foil around bottom and up sides of pan.
In bowl with mixer at high speed beat cream cheese and yogurt until blended and smooth. Beat in sugar, flour and salt. Reduce speed to medium; beat in eggs and egg whites, one at a time, beating well between each addition. Beat in vanilla.
Transfer 1 1/2 c batter to medium bowl; beat in cocoa powder until combined. Pour 1/2 of plain batter into springform pan. Spoon over 1/2 of cocoa batter. Top with remaining plain batter. Gently spoon remaining cocoa batter on top.
Using dull side of knife gently swirl batter, making sure not to disturb crust. Place in roasting pan halfway up sides of springform pan.
Bake 45-55 minutes until center is just set. Turn off oven; cool cake in oven with door slightly ajar; about 1 hour. Cool to room temperature on wire rack. Chill 6 hours or overnight. garnish with raspberries and mint, if desired. |
