Ingredients:
Ingredients:
2/3 c raisins
1 c rum
12 oz vanilla wafers
8 oz pecans
2 2/3 c powdered sugar
1 c unsweetened cocoa powder
6 tbsp light corn syrup
12 oz semisweet chocolate chips
2 tbsp vegetable shortening

Directions:
Directions:
Combine raisins and about 1/3 c of the rum in a small saucepan. Bring to a simmer, then cover and remove from heat. Let stand several hours to plump. While waiting, crush the wafers to fine crumbs. Chop the pecans to get a mix of coarse, fine crumbs, and powder for a variety of texture. Drain the raisins, retaining the rum. Combine the raisins, wafer crumbs, pecans, 2 c of powdered sugar, cocoa, and corn syrup in a large bowl. Add enough rum to the reserved rum to get 3/4 c. Add to the crumb mixture and mix well with your hands. Put the remaining 2/3 c powdered sugar in a small bowl. Shape the dough into 1-inch balls and roll in the powdered sugar to coat to prevent sticking. Set them aside for about an hour. Then melt the chocolate chips and shortening together over very low heat. Dip the rum balls, one at a time, into the chocolate, lifting them out with a fork and draining and wiping the bottom back into the pan. Place onto waxed paper in a cookie sheet, and let cool until set. Makes about 3 1/2 dozen.
