1 cup chopped onion
1 cup chopped green pepper
2 garlic cloves, minced
2 tbsp olive oil
1 pkg Andouille sausage, cut into 1/2-inch slices
1 can (14.5oz) diced tomatoes with green chilies
1 can (14.5oz) stewed tomatoes
1 cup water
3/4 cup long grain rice
Optional: 1lb raw shrimp

Directions:
Directions:
In dutch oven, saute onion, green pepper and garlic in oil. Add sausage, tomatoes, water and rice. Bring to a boil. Reduce heat; cover and simmer for 20-25min or until rice is tender.

Optional: can add one pound of raw shrimp during lsat 6-8min of cooking time and cook until shrimp have turned pink.
