2 tsp baking powder
1/2 tsp baking soda

3 large eggs
1/4 cup buttermilk
1/3 cup sugar
1/4 cup butter melted
2 bananas, mashed
1tsp vanilla extract
1 tsp grated lemon zest
1 cup blueberries, tossed with 1 tbsp flour

Preheat oven to 350ºF/180C. Butter an 8-inch/20-centimeter loaf pan or coat it with vegetable oil.

In a medium bowl, combine flour, backing powder, baking soda and 1 tsp salt.
In a large bowl, combine the eggs buttermilk, sugar, melted butter, bananas, vanilla and lemon zest and mix well. Add the flour mixture and whisk just to combine. Stir in the blueberries.

Pour the batter into the prepared pan. Bake until a paring knife or toothpick inserted into the bread comes out clean, about 1 hour. Cool in the pan on a wire rack for 15 minutes. Turn the bread out of the pan onto the rack and let cool.

Store at room temperature, well wrapped, for up to 3 days.
