2 lb frozen hash browns
1/2 cup butter
1 can (10-1/4 oz) cream of chicken soup
1 pint of sour cream
1 onion, finely chopped
2 cups grated cheese (separate into 1-1/2 cup and 1/2 cup for topping)
salt & pepper to taste

Directions:

Preheat oven to 350º.

Spray a 13x9" baking dish with cooking spray.

Mix all of ingredients except for the 1/2 cup of shredded cheese. Pour into baking dish. Top with remaining cheese and bake for 40 minutes or until golden brown.

You can substitute cream of celery or cream of potato soup for the cream of chicken.

Using Colby cheese will make this more like Cracker Barrell's version.

You can also top with crumbled corn flakes, crushed potato chips (add these the last 7-8 minutes of baking),
