3 egg yolks
4 or more Tbs. lemon juice (or to taste)
Dash cayenne
1/2 tsp. salt
1/2 cup butter melted very hot
1/4 cup boiling water

Directions:
Directions:
Place yolks, juice, cayenne and salt in blender and blend a few seconds. Pour the very hot melted butter slowly into blender while it is going and then the boiling water slowly in while blender is still going for a minute or two. Remove to a bowl that can not quite fit into a pan with barely simmering water (or a double boiler) until ready to serve over asparagas or Eggs Benedict. If it gets too thick carefuly add a little hot water.
