2 tbsp oil
1 lb chicken, diced
8oz mushrooms, chopped
1 sweet red pepper, chopped
3 scallions, chopped
2 cloves garlic, chopped
1/2 tsp Chinese five-spice powder
1/4 tsp red pepper flakes
1 can (8oz) chopped water chestnuts
1/4 cup chicken broth
2 tbsp soy sauce
1 tbsp hoisin sauce
1 head Boston lettuce, separated
1/2 cup crispy rice noodles
Duck sauce, optional

Directions:
Directions:
Cook chicken in oil, remove. Add mushrooms, sweet red pepper, scallions, garlic, 5-spice powder & red pepper flakes. Stir-fry for 3 minutes. Stir in water chestnuts, broth, soy sauce & hoisin sauce. Bring to a simmer, add chicken & cook for 3 minutes, stirring occasionally.

To serve, spoon chicken mixture into lettuce leaves and sprinkle with some rice noodles. If desired, serve with duck sauce for dipping.
