Ingredients: Deviled Eggs with Dijon Mustard, Green Onion, etc.
6 hard-boiled eggs 2 tablespoons mayonnaise 1 1/2 teaspoons mustard paprika, optional
Halve hard-boiled eggs; scoop yolks into a small bowl. Mash well; add mayonnaise and mustard until desired consistency is reached. Using a small teaspoon or pastry bag, fill egg white halves or quarters. Sprinkle with a little paprika. _____________________

Put 12 eggs in a large enough pan to cover eggs with cold water. Bring to a boil and boil for 9-10 minutes When the time is done drain all the boiling water off and cover eggs with cold water. I usually cover with cold water twice. While the eggs are in the cold water crack all the shells. This makes the eggs cool quicker. Peel the eggs and cut in half Place whites on a dish Scoop yolks into a small bowl. Place whites on a dish. Mash the yolks well; add mayonnaise and mustard until desired consistency is reached. Notes: You may have to add more mayo and mustard. I keep tasting mine until it tastes right.
You can do more or less eggs, just adjust your mayo-mustard to taste. You can also add green onions if you want.
