4 tbsp tomato paste
3 tbs sunflower/vegetable oil
1/4 tsp citric acid
1/4 tsp red chili powder
1/4 tsp pureed ginger
1/4 tsp pureed garlic
1/4 tsp cumin powder
1/4 tsp sugar (secret ingredient!)
1 whole chilli, sliced
handful of chopped cilantro
salt to taste

Put everything into a saucepan, stir, and heat till it steams a lot. Simple as that!!

This is great for an indian dish called dhokra, which is a kind of savory 'cake' whose primary ingredient is semolina....I'm working on the recipe!! Instead, you could use it as a spicy dip for chips, or you could even use it for 'masala fries'. Make/buy some fries and toss them in the oil till they are hot.
