Ingredients:  
15 oz. can corn
15 oz. can rinsed black beans
2 15 oz. cans petite diced tomatoes ( I use with jalapenos)
1/2 cup fat-free Italian dressing
1 med to large purple onion diced
2 Tbsp. minced garlic
Handful of cilantro
Salt & Pepper to taste
Queso Blanco to taste

Directions:
Directions:
1. Mix all ingredients but queso blanco into a large pan or bowl the day before.
2. Refrigerate covered overnight.
3. Right before serving, stir salsa and then crumble a few handfuls of queso blanco over top.
4. Serve cold.
