1/2lb orange lentils
1 onion
1 carrot
1/2 c. yellow turnip
2/3 sticks celery
1oz butter/ oil
2 qt. water
Salt & Pepper
1/2 pt. milk (optional)
1 pinch dill
1 pinch marjoram
1 pinch rosemary

Directions:
Directions:
1. Soak lentils in boiling water while cutting vegetables.
2. Prepare vegetables by cutting into small squares or slices.
3. Rinse and drain lentils.
4. Melt fat in soup pan.
5. Add vegetables and lentils and sweat until the fat is absorbed.
6. Add water and salt and bring slowly to boiling point. Simmer until the vegetables and lentils are cooked (2-2 1/2hrs).
7. Mash down the vegetables and lentils or rub through a colander.
8. Add the milk and reheat, adding the seasonings to your taste.
9. Serve very hot!
