1lb ground round or ground turkey
1 c. chopped and seeded green bell pepper
1 c.chopped onions
1 c. uncooked long grain rice
1 c. frozen corn
1 x 15oz. can black beans, drained
1 x 15oz. can enchilada sauce
1 x 15oz. can diced tomatoes with jalapeño and cilantro
1 small can diced green chilis
1 c. shredded cheese

Prep time 20 minutes

1. Brown ground meat in skillet. Add bell pepper and onions and cook over medium-high heat for 4-5 minutes, stirring occasionally. Drain.
2. Stir in all the remaining ingredients except the cheese. Spoon into ungreased 13x9-inch (3 quart) baking dish. Cover tightly with foil.
3. Bake at 375º for about 1 1/4 hours or until rice is tender and has absorbed much of the liquid.
4. Remove from oven, sprinkle with cheese and return to oven uncovered for 5 more minutes or until cheese is melted.

Serves 8

**Serve with warm tortillas or tortilla chips and top with sour cream, guacamole and salsa if desired. There are many opportunities for substitutions here depending on your taste buds and your pantry stash.
