12 boneless skinless chicken thighs, or 6 chicken breasts
1/2 c. flour
1 T. (or more) smoked paprika
kosher salt
1 T. butter
1 c. heavy cream (or sour cream if desired)
1 diced jalapeño pepper (or 1/2 can chopped green chilis for wimps)
2-3 minced garlic cloves
1/4 c. finely chopped ginger
1/4 med onion, sliced into strips
Delicious, pungent, cheese (No pre-shredded stuff. You can shred it yourself, it's OK)

Prep time: 30 minutes. Your presence is required.
Equipment: cast iron pan (No.8),stove top, oven (350º), pan to bread chicken, bowl to mix stuff.
Combine cream, ginger, pepper and garlic in bowl. Feel free to add mustard, honey, brown sugar, etc. Set aside.
Mix the flour, paprika, and a few pinches of salt together, and coat all your chicken.
Melt butter and some olive oil in cast iron, then fry the chicken and onions. You'll probably have to separate chicken into two batches. Give them some room when frying, about 5 min per side? Get them crispy--it'll pay off later.
Once the chicken is fried, arrange in cast iron, and pour cream/ginger mix all over. Put in oven for 15 min. Flip chicken, and bake another 8 minutes. Flip once more and cover with cheese. Breathe heavily. Broil for about 8 min. Serve with rice and steamed veggies.
