10 to 15 saigan, cleaned, peeled, cut up
2 garlic cloves
1/2 onion
3 medium size potatoes, peeled and cut up
1 tablespoon curry powder
1 teaspoon jeera
3 tablespoons vegetable oil or salted butter
1 to 2 cups water for cooking
Salt and pepper to taste

Directions:
Directions:
Heat vegetable oil in a medium size saucepan, then add garlic, onions and pepper.
Stir for 1 minute then add jeera and curry powder.
Simmer for 3 minutes, add 2 tablespoons water, mix and then add saigan and potatoes to mixture.
After about 3 to 5 minutes, add 1 to 2 cups water.
Cook for about 20 to 25 minutes.

Note: On all fried curry dishes, always use a lid over heated pots and pans to shield your face when adding water to hot oil mixtures.
