2 eggs
3/4 tsp. salt
1/4 c. vegetable oil
1/4 c. water
3/4 c. matzah meal
1 Tbsp. chopped parsley (optional)

Directions:
Directions:
1. Beat eggs with salt. Mix in oil and water. Stir in matzah meal and parsley. Refrigerate one hour.
2. In four-quart pot, boil 2 1/2 quarts of water.
3. Wet hands and form 10-12 balls.
4. Drop balls gently into boiling water and cook covered for 30 minutes (no peeking!!)
5. Drain with slotted spoon and serve in hot soup.
