½ cup shortening
½ cup butter
¾ cup sugar
1 cup cooked mashed carrots—cooled
1 egg unbeaten
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
½ tsp. salt
FROSTING
1½ cups powdered sugar
zest of one orange
3 to 5 tbsp. orange juice

COOKIES: Cream sugar, butter and shortening together. Add mashed carrots, then egg and vanilla. Stir in dry ingredients. Drop by rounded teaspoonful onto lightly greased baking sheet. Bake at 375° 13 to 15 minutes or until lightly browned.
FROSTING: Beat all ingredients together. Needs to be thin, so that you can drizzle them over the cookies, but not so thin that it runs off. Drizzle with orange frosting while slightly warm.
