1 cup sugar
4 Tbs. butter
1 egg
1 cup milk
2 cups flour
3 tsp.baking powder
1/2 tsp. salt

Topping:
3/4 cup sugar
1/2 cup flour
4 Tbs. butter
1 tsp.cinnamon

Directions:
Directions:
Grease a 9x13 pan. Heat oven to 350 degrees
Whisk flour, salt and baking powder in small bowl. Put butter and sugar into mixing bowl and beat until well mixed. Add egg and beat again. Add 1/2 of the cup of milk and beat slowly and then half of the flour mixture and repeat. Then add the rest of the milk, mix and finally the other half of the flour. Mix until smooth. Pour into greased pan.
Crumb topping:
Whisk sugar, flour and cinnamon well and using a fork or pastry blender mix in the butter until it forms a crumbly mixture. Sprinkle this over cake and place into oven. Bake 35-40 minutes.

To make this into my Blueberry Buckle you just have to add 1 cup blueberries to the cake batter. I find this is a welcome gift for a friend who is ill, moving, very busy etc. They can use it for breakfast tea or dinner. It devides perfectly into 3 small foil pans that I buy in the dollar store.
