3 Tbs butter
1 carrot diced
1 celery stalk sliced
1 onion chopped
1 1/2 cups fresh sliced mushrooms
2 cups chicken broth
1/2 cup diced pimento
1 1/2 cups cooked diced chicken
3 Tbs flour
1/4 cup cold water
1 Tbs tarragon
1/2 tsp thyme
1 1/2 cups cream

Directions:
Directions:
Saute in butter the carrots, celery, onions and mushrooms. When onions are soft and transparent add chicken broth, pimentos and chicken. Simmer 15 minutes. Mix well the flour and cold water (till smooth), stir into soup while stirring. Season with 1 Tbs. tarragon and 1/2 tsp. thyme. Simmer 20 more minutes. Add cream.

This is a very quick soup to make and you can double the recipe. It is served at Peter Christian's Restaurant in New London, New Hampshire, a halfway stop between the McIntyre's in Vermont and us in Boxford.
