6 oz. dried flat rice noodles
2- 32oz. pkgs. low sodium Chicken Broth
4" ginger , cut in 1/4" rounds
2- 13.5oz lite coconut milk
1.5 lbs. chicken breast - thinly sliced and cut into pieces
3/4-1C lime juice (6 limes)
6T fish sauce
4 tsp light brown sugar
2 jalapeņo - thinly slice
1.5C fresh cilantro leaves
Asparagus, diagonally sliced into 1" pieces
Mushrooms ( 2 different) coarsely chopped
pepper

Directions:
Directions:
Soak noodles and drain, cut into small pieces.

Bring broth and ginger to a boil. Reduce heat to med. - simmer 10 min.
Add coconut milk - return to simmer
Add chicken - simmer till cooked (3 min)
Stir in lime, fish sauce, sugar, pepper and cilantro - 1 min.

Stir in noodles.green pepper and red pepper (if desired).

Add fresh cilantro while serving.
