6 large potatoes
4 oz. queso fresco (Mexican crumbly cheese)
3 tbsp. onion, chopped
1 head lettuce, chopped
1 tomato, chopped
1 lemon
2 dozen corn tortillas
milk
olive oil
salt and pepper

Directions:
Directions:
Boil potatoes and peel. Heat oil for frying. Mash potatoes with a masher and mix with onions and the queso fresco. If mix is too thick, add a little bit of milk. Season the mixture with salt and pepper to your taste. Warm tortillas in the microwave for 15 seconds. Spoon potato mixture into tortillas and fry until golden on both sides. Serve and garnish with lettuce, tomato, cheese and lemon (if desired).
