4-5 lbs. chicken breasts (bone-in or boneless)
1/2 head of garlic, peeled and finely chid
2T dried oregano
1T coarse sea salt
1T coarse ground pepper
1/4C red wine vinegar
1 bunch green onion, chid
1/4C olive oil
1C pitted prunes, cut in half
8 pitted Kalamata olives, cut in half
8 pitted Spanish green olives, cut in half
1/2C capers with some juice
3 bay leaves
2T parsley
1C white wine
2T brown sugar

Directions:
In a large bowl combine all ingredients EXCEPT brown sugar. Place chicken in a large ziploc bag and pour marinade in bag. Let sit several hours or overnight.

Preheat oven to 350 degrees. Arrange chicken in a single layer i one or two large, shallow baking pans. Spoon marinade over evenly. Sprinkle with brown sugar.

Bake for 50 min to 1 hour (adjusting cooking time if using bone-in breasts).

Transfer chicken,prunes, olives and capers to a serving platter. Add some of the pan juices and sprinkle with parsley or cilantro. Serve remaining juice in a gravy boat.
