Pie:
1 8-inch baked pie shell
1 cup sugar
5 tbsp. corn starch
1/4 tsp. salt
2 cups milk
3 egg yolks
3 tbsp. butter
1 tsp. grated lemon rind
1/3 cup lemon juice
Meringue:
1/4 tsp. salt
1/4 tsp. lemon extract or 1 tsp. lemon juice
3 egg whites, room temperature
6 tbsp. sugar

Directions:
Directions:
Pie: Mix sugar, corn starch and salt. Add milk gradually to sugar mixture and stir until smooth. Cook over low heat, stirring constantly until thickened about 10 minutes. Stir small amount of hot mixture into egg yolks, then pour egg yolks into hot mixture and continue cooking. Stirring constantly about 5 minutes. Remove from heat and add butter, lemon rind and juice. Blend thoroughly. Pour into baked pie shell.
Meringue: In a large mixing bowl add salt and lemon extract or lemon juice to 3 egg whites. With beater on add sugar to egg white mixture, 1 tbsp. at a time. After last tbsp. of sugar beat mixture until stiff and glossy. Spoon meringue on top of lemon filling and spread to touch edge of crust. Bake at 350º for 12 to 15 minutes.
